Pesto Zucchini Pasta

Zucchini Pasta:

  • 4 Medium Zucchinis
  • Lemon Zest

Pesto:

  • 2 Cups Basil
  • 2 Cups Baby Kale
  • 1/4 Cup Walnuts
  • 1 Clove Garlic
  • 1/4 Cup Parmesan Cheese
  • 1/2 TSP Sea Salt
  • 1 TBSP Olive Oil
  •  

Directions

To make noodles, you will need a spiralizer. If you do not have one on hand, you can also use a knife and carefully carve strips. In a food processor, pulse all pesto ingredients together. Add in the olive oil and cheese. Mix pesto sauce with spiraled noodles.
